A Taste Of Autumn With New Wee Shorties Mini Oat Shortbreads

Autumn is the perfect time to gather in the kitchen and bake together, and these Mini Apple Tartlets make the most of the season.

Featuring our new Wee Shorties Mini Oat Shortbreads as the star of the recipe, crumbled into a buttery base, layered with homemade apple caramel, vanilla cream cheese, caramel drizzle, and finished with a whole oat triangle.

Ingredients

For the base:

250g Walker's Wee Shorties Mini Oat Shortbread

80g butter, melted

½ tsp nutmeg

1 tsp cinnamon

For the apple caramel:

30g butter

6 apples, peeled and chopped into chunks

100g brown sugar

100g double cream

 

For the cream cheese topping:

100g double cream, lightly whipped

250g cream cheese

½ tsp vanilla essence

60g icing sugar

 

Caramel sauce

12 Walker's Wee Shorties Mini Oat Shortbreads, for garnish

Method

1. In a food processor blitz the Walker's Wee Shortie Mini Oat Shortbreads with cinnamon, nutmeg & melted butter.

2. Line a muffin tray with paper cases and divide the crushed biscuit into the cases, reserving 2 tbsp for garnish. Put in the fridge to firm up.

3. In a pan, melt the butter. When foaming, add apples and cook until soft, 5 mins.

4. Toss in the brown sugar and let it melt. Cook for 5 mins.

5. Turn off heat and stir through the cream. Leave to cool completely.

6. In a large bowl add the double cream, the cream cheese and sieve in icing sugar. Fold

through.

7. To assemble, add a heaped tablespoon of apple caramel over the biscuit base then pipe

a swirl of vanilla cream cheese on top.

8. Drizzle with caramel sauce, sprinkle over a crushed biscuit and top with a whole Walker's Wee Shortie Mini Oat Shortbread. Enjoy!
