Mini Christmas Pudding Shortbread Truffles

Celebrate the season with these no-bake Christmas Pudding  Shortbread Truffles.

Made with a buttery shortbread crumble, dark chocolate and a hint of brandy, they bring all the richness of a classic Christmas pudding into one bite-sized treat. Finished with white fondant and holly decorations, they’re easy to make and a charming addition to any festive gathering.

Ingredients

8 Walker’s Shortbread Fingers

100g dark chocolate melted

60ml double cream

50ml Brandy

Salt ¼ teaspoon

50g white fondant, for decoration

Holly decoration

Red ball cake decorations

 

Method

Add the Walker's Shortbread Fingers, melted dark chocolate, double cream, brandy and salt to a food processor and blitz until smooth.

Roll a tablespoon of the mixture into balls.

Roll a little of the white fondant icing into balls and flatten them, pinching their sides to make an irregular shape for the Christmas pudding tops.

Press the holly decorations on top, cover and refrigerate for 10 minutes to firm up.
