Festive Eggnog Shortbread Pie

Bring a touch of Christmas tradition to the table with our Festive Eggnog Shortbread Pie.

A buttery Walker’s Shortbread base is baked until golden, then filled with a smooth eggnog custard made with Advocaat, warming spices, and vanilla.

Finished with a flurry of Walker’s Assorted Shortbread Festive Shapes, plus seasonal touches of rosemary and star anise, it’s a show-stopping bake that tastes as good as it looks.

Ingredients

200g Walker's Shortbread Fingers

65g butter, melted

70g caster sugar

4 large eggs

½ tsp ground nutmeg

½ tsp ground ginger

½ tsp cinnamon

300g Advocaat

100ml double cream

½ tsp sea salt flakes

1 tsp vanilla extract

Method

In a blender, add the Walker’s Shortbread fingers and melted butter and blend until smooth then press into a greased 20cm tart dish then bake in a pre-heated oven for 15–20 mins at 190°C until the edges are golden and slightly crispy then set aside to cool.

In a mixing bowl create the mixture by adding the sugar, eggs, Advocaat, double cream vanilla extract, ginger, nutmeg, salt and cinnamon then whisk together for a few minutes to combine all of the ingredients.

Pour the mixture into the shortbread base, then bake in the oven at 190°C for 20 mins until the mixture begins to rise and becomes golden on top then leave to cool on a rack.

Decorate with Walker’s Festive Stars and Shapes as well as Mini Festive Shortbread Stars and Tree’s, some small sprigs of rosemary, along with any other festive decorations of your choice and enjoy!
