Mini Shortbread Strawberry Trifles for Summer

Everything you love about a classic strawberry trifle, with an all-butter shortbread twist.

Made with layers of seasonal strawberries, cream and Mini Walker's Shortbread Fingers, each trifle is served in its own glass for an easy summer dessert that's full of flavour and texture.

Ingredients

12 large srawberries cut into small pieces

1 sachet (57g) strawberry flavoured powdered jelly

400ml hot water

100g Walker’s Shortbread Mini Shortbread Fingers, crushed, plus more for serving

300ml double cream

1 tsp vanilla extract

300ml madagascan vanilla custard

1 tbsp caster sugar

 

Method

In a jug, add the powdered jelly and pour over the hot water and mix until dissolved and
leave to cool slightly.

Fill a third of the jars or glasses up with the strawberry pieces then pour over the liquid
jelly covering them then leave to set in the fridge until firm.

In a mixing bowl add the cream, vanilla extract and sugar and whip until you reach stiff
peaks then set aside.

Add a layer of the crushed Walker’s Shortbread Mini Shortbread Fingers then add a layer
of custard and then the whipped cream.

Sprinkle some extra shortbread crumbs and add a few mini shortbread fingers and a
couple of slices of strawberries.
